Tonights cook...Pork Chop/Potato

First try on some chops...not much time to prep/get creative, but turned out well.
Rubbed with Plochmans Mustard and DP Pineapple Head, Garlic Powd, Smoked Paprika. Direct 400 till 145, which I missed to 148-149. Foiled and still YUMMY!
Even Anika liked it...teeth never hit the fork.

Anika looks like a happy baby!! we had a shepard lab mix that could clear a fork too LOL she hated the feel of it and was very easy taking food.

The 23rd was our Golden Girl's 6th birthday -- Mikey shares the date with her :evil: -- anyway, tradition at the Desert Oasis is Meatloaf For All on doggie birthdays!
Chop and potato look real good, too. Love potatoes that way -- a trick my auntie taught me.....but they always seem to double in size by the time they are done and cooked -- How did you keep yours so uniform?? -
I sliced the potato, and then set it on foil. Carefully sealed the edges tightly in towards the top/center of the potato and sort of made a 'flat' botton to the foil as well. I did ponder if a skewer through it would work? But without turned out fine for me.
Anika turns 6 in October...she's real good...and super smart. TOO smart some times!
I put a pork butt on at 10pm...4 hours into it...love these 'through the night lo & slows'!
