Trimmed some spares-rubbed them w/mustard and JH pecan rub.Itook the trimmings and put seasoned them w/chili powder,cumin,garlic,lemon pepper,olive oil and tequila.I hate to say it but the trimmings were as good as the spares.

    How long did it take to cook the Spare Ribs ? I made some today and I feel I cooked them too long. I heard 5 - 7 hours. I figured 6 hour. I remembered the spare would be done when they bend and mine were more then bending.

    I do have to agree with you with the trimmings. I put the trimmings in a Vacuum Meat Machine and let the meat tumble for 20 minutes. I used Yoshida's Gourmet Sauce. That came out very good. It was like eating candy.

    The nice thing is I can try this again and know better.
