Smoke-Hut stuffed crust pizza

Pizza Hut invented the stuffed crust pizza as far as I know so they get their due; I wanted more so I put is all the way to the center:
Start off with two dough balls, a small & a smaller
Roll them out
Add mozzarella to the larger piece
Put the smaller ‘lid’ on
Crimp the edges to seal it in
Pop into a well olive-oiled cast iron pan & cover for a second rise
About 2 hours later
Add some sauce
And some more mozzarella & seasonings
Pop onto the egg, indirect at about 400
About 20 minutes or so later
Resting on the cutting board
Cut in half

dude the sriracha fatty with dizzy dust was nice, although I think next time it'll have to go indirect, all that corn syrup in the orange marmalade really wants to burn..., it got real, real dark, but the flavor was greathappy in the hut

that is a can of Tuttorosso crushed tomatoes, all I use outside of my own home canned stuff. I add olive oil, garlic, hot pepper flakes, salt & pepper, a finished product so good you could drink it from a mug :ermm: :ohmy: :laugh:happy in the hut

when you try it, pop a chunk of cherry wood in the coals. I put a small chunk in right at the outset of starting the fire, & waited till the smoke ran clear. It gave an incredibly nice hint of smoke flavor to the pizza, not overpowering at allhappy in the hut

Great idea - like a cross between a calzone and a pizza - only better.
BTW - what's the difference between a calzone and a panzerotto? (Just thought I'd ask - I've always wondered - they look the same to me.)

Floods at dinner time are not good. Only happened 4 out of the last 5 days. I had to close 1 full day and 1/2 another.

if I'm not mistaken, panzeratti are deep fried calzones or strombolis; there was a little pizza place in Jersey my brother & I used to go to many many years ago called Panzerattis, & their specialty was deep fried inside-out pizzas, man, talk about tastyhappy in the hut

threw a small chunk on to grill the Polidori sausage - it intensified the herbs/spices and gave a sweetness to the exterior...will post the overall effects of the pizzas above when completed -
