I let them get to room temp with a little butter/Raising the Steaks mixture...seared them with the 1/2 grate skillet (dome temp 650)...let them rest and shut it down to 400...cooked for 7 min to medium...my best steaks ever

Man those are my favorite! you forgot the bacon on the fillets to! That makes it just a little bit better!
