\Brisket Plateau

12lbs brisket didn't plateau. What happened? It cooked very fast. dome 230 indirect, drip pan, just like always. Usually 1.5 hours per lbs. Cooked to 190 in 7 hours. went from 145 to 190 in 2.5 hours. what the hell happened?

they all act differently. . . .does your dome temp thermometer need calibrating? . .maybe your egg was hotter than you think.... .maybe it was a fattier brisket...sometimes the fattier the brisket, the faster it cooks cause the fat in the meat makes it cook faster than a leaner brisket...
