Weekend cooks

This was a busy weekend. Cinthia and I had a wine dinner party saturday night at home. I cooked. You can see the menu and photos here.

The fifth course was the "lip" of the "lip-on" ribeye. I bought a subprimal and went from there:

This is the final dish, the sides were, bone marrow "crackling" atop a fake marrow bone filled with braised oxtails:
