Great looking meal, thanks for posting Stike. "She was gobsmacked" - that's so much fun to do. :silly:
Doug -
just to be clear, i wasn't trying to one up, i was simply reminded by your fine cook that i had fallen into a rut, and it was time to get back out there.
i have no doubt you could make this look like fishsticks and fried.
the paella pan did not stir any bad memories. i had forgotten about the episode until you just brought it up.... :ermm: :( -
i always get caught staring at other women's palates.
are you in on the coozie-drawing list? so far i think it's just whackmaster. hahaha -

re: gobsmacking.... we have a few friends that appreciate the food off the egg. i had to bring an appetizer to a cubscout dinner the other week. one buddy of mine, my partner-in-crime at the cubscout camp-outs (lagavulin, anyone?) was home making his stuff. i sent this pic from my phone, and said "Moo+Oink+Moink. Moink balls... italian meatballs wrapped in hickorybacon, smoked with hickory, dipped in home made bbq sauce and honey glaze, smoked again with more hickory. What kind of cr*p are YOU bringing." he ate about 10 of them.
Was the first time i made them. good stuff. nothing stellar, but perfect for that crowd. hint of smoke, etc.
gobsmacking is easy with a BGE -
So..no left overs?
Glad it was a hit.
I'll pay for shipping on the beverage holders.
I always put them in our lobby for the patients to use when they are here for the day. Good to get minds off surgery and into BBQ conversation.

Did you post your "beet salmon" cure recipe? That looked great...
-
VERY impressive as always! Thanks for sharing!Re-gasketing America one yard at a time.

And now the newbees know why YOUR THE MAN!!! Sure miss the pics and official trouble you are always in!! One thing I miss still is the "little Italian gal" grating your carrots for you in your sig!! BRING HER BACK!!!
-
Hey Jeff, That is some cook. I think you smoked Rod for sure. Have a good day. Tim

Missed your posts esp. your work stuff. Post some of your work thingies. Smiles back at you. Ronnie.

Looks great strip. I know what you mean about getting stuck in a loop or rut. One of the best things about this forum is that the ideas just keep coming, from people using some of the same equipment as we all have.
btw....I like how you laid out your dry ingrediants in little bowls or ramikins....very FN'ish. -
thank you sir...
might try aging duck! -
hahaha
giada?
maybe, maybe....
just trying to keep up with you, man. you consistently post great pic-filled cooks. always enjoy seeing them -
nah. not tryna smoke him. i just got inspired. hahaha
time to get off my adze. -
Delectable cook! I like your menu of duck with a spring risotto, grilled leeks, and the salad. Looks like you nailed the crispy skin. The sauce looks absolutely yummy. Your guests were fortunate, indeed. Everything looks perfect, just like your pic from yesterday, lol.
-
Yep, and so much fun.
Doug -
if I didn’t know any better, I’d say you have over 20 years experience as an architectural designer & illustrator segueing into (inter alia) culinary art  ; it all looks fantastic & I can only imagine how it tastedhappy in the hut

thanx. pinot noir was good with it too. nothing stellar, but decent enough.
i had time when taking the pics to fancy the scene up with those little dishes. haha
i had all of it cooked except the risotto and duck so that when my wife waked in i could start. i don't normally get all "mise en place" about things except paella. even then i screw that up. hahaha -
i had to photoshop in a chunk that was missing from th wooden spoon, and i took out an ugly scented candle thing that my wife likes. other than that, no photoshop. just like yesterday
-
goof.
was one of those days we talk about. when you have time to do the stuff that was the very reason you started working for yourself in the first place.
nice to shake the dust off the BGE -
but first I better try duck as I've never eaten it before! Had greasy wild goose once - any similarity in taste and texture?Re-gasketing America one yard at a time.

Showoff Looks great!

Nice looking plate
-
Well no wonder you don't post much... setting up that photo shoot must have taken hours looks great Jeff or is this really Jeff.... hmmmmm......
-
In all fairness nobody told me it was a contest.
Just wait....I have a few tricks up my sleeve.
I wish we had taken pics of my cajun paella last year with crawfish, gator tail, and andouille. I was told it was pretty good, but I didn't get a taste. -
whether it's jeff or not, that's his sink. only spot in the house with decent light for the pics.
-
thanks LR
-
a litle overstuffed. that was my plate. the breast was a 12 oz breast, and i made enough risotto "for four" according to the recipe. i just now had the risotto leftovers, which were literally three spoonfuls.
we sucked it all down. nuthin left over but sauce -
thanks Ronnie. most of my work stuff has been confidential... and we have a ways to go til pumpkin carving season
hahaha
