Butt

I tried my first Boston Butt last night. I started it about Midnight.
I regulated my dome temp to 230 before I went to bed at 1:45am. I woke up this morning and my meat temp is at 199 and dome temp at 300.
What do I do?

    Mark,[p]I would pull the meat off. Wrap it in aluminum foil, then a couple of old towels. Place this in a cooler and fill it the rest of the way with news paper. It will hold this way for hours. The most I have done this way is ~5hours. Then pull the meat like you normally would. It might not be perfect, but still should taste very good.

    Sounds like the temp jumped as soon as your head hit the pillow. It should still be very good, the meat may not "pull" due to the fact of blowing right through the plateau stage. But still should be very good, regardless.
