Rinds & Rellenos

This is an odd combination but I found a jar of watermelon rinds in my cabinet today when I was "organizing" it. So I made some bacon wrapped watermelon rinds that were out of this world.

I also had some peppers left over from last nights Cinco de Mayo celebration. So here's what I did.

First off the bacon wrapped watermelon rinds.

The ingredients.


Wrapped the rinds with bacon and some Tony's on top.


Cooked raised direct 350 degrees.


Done & plated.


Next up Anaheim Chile Rellenos.

Roasted some annaheims.



In a bowl coverd with saran wrap and let sit for 30 mins. then peeled.


Stuffed them with chorizo, mexican cheese, diced onion and some "firecracker spice".
Made a batter of 6 eggs, 1/4 cup flour, 1/2 tsp. baking powder and a pinch of salt. Poured over the chiles.

Covered with some mexican cheese and cooked on the egg indirect 375 for about 30 mins. until brown.


Done and grated some cojita cheese over them before serving. These were great and a nice alternative to deep frying.

    Yes it is Kari, we're hooked on the stuff and ritas too. When we're in AZ our lights flicker at 5:00, we think it's when everyone turns on their blenders. :)

    Pat these are WAY too healthy for you. They're not the usual fried rellenos. They even have "reduced fat" cheese too. I'm sure you have Garfield's mindset..."If it ain't fried it ain't worth eating". LOL!!

    I had to save that, Anne. I love me some Chili Rellenos, but the 'fried' part holds me back. No More !!! :woohoo: :woohoo:

    BTW one of the pepper plants in my garden is Ancho Magnifico !

    I'm with you on that. Del and I are steering clear of the "fried" food. I still have to try to duplicate that salad that Jenna put together the other night. I'm ready for a nice salad. Enough of the mexican food.
    You're way ahead of our growing season if you've got your plants in. We may get snow tonite, frost for sure. :(

    Snow and frost ! WOW ! Funny how we get 'caught up' in our own environs! 80% chance of no frost here after about April 2-3.

    Peppers have blooms and I saw one tiny bell today. Tomatoes have lots of blooms and squash is going strong.

    I FINALLY germinated several ADP seeds that 'bill' sent me. Too forever for them to pop up. WIll be transplanting them to an Earthbox soon. Got my first metal 'rack' painted this afternoon. The kid welder will have my other 3 next week. Once I get them all painted, set in place I will take pics.

    Just outstanding! I have fryed the peppers before on the Egg but is a real PIA to do. Does the breading set up well cooked in the Egg like you did?!!Will have to try that next week. I do have to comment about one thing and you know it wouldn't be me if I didn't! You remind me of the collage sonority girl with this cook. You know. "Double meat, extra cheese large pizza to go.......and a diet Coke!!" :laugh: Low fat cheese and BACON WRAPPER watermelon!! Yep watching Del's colesteral on this one for sure Sis!!! :P

    Clark them seeds of mine have been around the world! Seems everyone is behind on there seed this year. I know bills and mine both are still in sets. One question thought. Are they ADP's that I started or the Bhaut elephant peppers Zippy got aholt of. I was thinking bill sent you some of the Bhaut pepper seeds. ADP's have always been easy to germinate but the Bhaut's are a real pain. Only got one out of 10 growing now myself! :ohmy:

    Did you cook the chorizo before you stuffed the peppers?
