Spawn's stuffed portobellos w/ pics
the spawn was in a creative cooking mode this weekend. . .after the success of the stuffed gourd on the 4th of july, it was suggested that she try to do a stuffed portabello mushroom. . . so here is what she did. .. [p]first, we bought 6 nice size portabellos. .2 of them, she diced up and sauted in butter with some fresh rosemary and shallots (garlic would be a little better, but the wife has a garlic intollerance so we don't use it around the house, although the shallots were quite nice). . ..[p]
while this was going on, spawn diced up some stale french bread, mixed it with about 1/2 a cup of milk. . .when the sauted shrooms were cooled down, she added them to the bread/milk mixture along with a good dose of fine shredded permesiano (the good hand grated stuff) and a little of ken stone's witchy red rub). . .she then spooned this mix into the other four portobellos. .. gave them another shake of the witchy red, along with another dose of the grated cheese. . [p]here they are ready to go on the egg. .
[p]got the small egg settled in at 350 degrees. . .put the shrooms on the the grid direct for about 15 - 18 minutes. . .
[p]served them with one more dose of fresh grated parmesian, had them with a beautiful t-rex'd dizzy cow-lick tenderloin roast, fresh string beans and some mild ABT's that i did (sweet banana peppers, stuffed with cream cheese, a littel dizzy pig ragin river and wrapped in prociutto. ..[p][p]it was an unbeleivable dinner. . .the portobellos were fantastic, and a great side to the tenderloin. . .spawn outdid herself on this one. . .
