Alternate setup - temperatures change?

I'm trying to plan a moderate length smoke (3-5 hours) of a fairly large quantity of food, and am trying to figure out what happens if I remove the fire ring, place an invrted plate setter on the rim of the firebox, then build up from there (probably two layers, Prime rib and tri tip for reverse sear), most likely two layers with about 6 inches or so between the two grids.(going to need a big space due to size of primes - tried a standard setup, and it just won't work)

Has anybody ever tried a setup like this?

Do the temps vary much? - in other words, greater variance between top and bottom due to proximity of lump to plate setter?

Will I need to get more air in due to lack of space between lump and setter? (wider vents?)

Any thoughts/input?
