Stuffed Brisket Question(s), Chef Will??

About a year or so ago -- maybe six monthes -- there were several threads about stuffed briskets. I tried it and loved it. Unfortunately, I cannot remember what I did. I do remember stuffing the hunk o' meat with hot sausage, onion and garlic. I'm sure I rubbed the outside with something. What I don't remember is if I cover the top with bacon. Also, I think this was a rather short, 3 -5 hour direct cook with wonderful results. I think this was Chef Will's recipe, but I can't remember.[p]Thanks in advance for any tips.[p]B~F
