Here you go I got them:

Bacon Wrapped Watermelon Rinds

1 Jar (16oz) pickled Watermelon Rind
Tony Chachere's or your favorite cajun-like seasoning or rub
1 lb bacon

Cut bacon strips in thirds or fourths to fit rind pieces
Wrap a pickled watermelon rind with bacon and secure with a toothpick
Sprinkle liberally with seasoning
Girll at approximately 350 degrees. You have to watch them closely and rotate often, because with the high sugar content they burn easily


Easy Breakfast Casserole

2 cups dry Chicken stove top stuffing mix from the box
2 cups Milk
1 # Sausage, cooked, drained well, and crumbled (we used Hot-Spicy)
6 Eggs beaten
1-1 1/2 cups Chedder Cheese Shredded
1/2 Teashop Salt

Preheat oven to 350 degrees fahrenheit
Lightly grease a 9 x 12 baking dish
Mix all the ingredients together
Pour into prepared baking dish
Bake for about 45-50 minutes or until set

we used the generic stove top, original flavor, whole box (was actually about 2 1/4 cups. May use ham instead of sausage. For variation may add green onion, mushrooms, canned green chiles, (Red) bell pepper.
