Pork Butt Question

My pork is going to hit 195 in 30 minutes. Do i wrap it in foil and store it till the morning or pull it tonight to store it?

    I normally pull them, then store.

    After it gets below 120 it is hard to pull.

    Okay pull it tonight. At least that will allow me to sample it. 20 lbs for two dinners over the weekend.

    Eat a bunch while you're pulling. Won't be near as good tomorrow.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    If you can, shred it and vacuum seal it until you are going to eat it. Nothing is better then fresh off the egg butt but vacuum sealing helps maintain its flavor when you can't eat it right away.
