I put my turkey on about 30 minutes ago. It is covered in Dizzy Pig Dust which is the family favorite. I used apple and cherry wood chips for smoke, not to much because the girls don't like to much smoke (wife, sister-in-law, mother-in-law, and Lisa the visitor). I have it going at 350 dome indirect with plate setter upside down and drip pan sitting on platesetter, grid on legs. A little burning is occuring where the drip pan doesn't cover the openings on the sides of the platesetter. Should I make any changes? I can pull it and reset it to cook with changes. The pizza pan that I have is to large to sit on the plate setter in the opening between the legs. I do have a BGE pizza stone but I am not sure that is big enough. This is a 16 lb bird.

That is the start of a good looking cook... you could foil the wings and pin / tie them up closer to the breast to keep them away from the exposed flame.

I place spacers between the plate setter legs up and the drip pan. Also place HDAF about 3 inches in from sides so the interior is an open box over the drip pan and the outer edges are protected.

Cut some pieces out of another foil pan and then place on the grid where you are having hot spots or put down several layers of foil on the hot spots.
I would check temps in breast and thighs and consider separating the breast when it is done at 160 then the thighs later at 180. Foil the breast while waiting on the thighs. -

What do you use for spacers?

1/2 inch copper elbows about .$25-30 each big box store or 4 small aluminum balls crushed like small burgers.

it is looking great. we do them a lot and go direct 350 till done.
this one is direct on the large
this one is indirect with the mini pizza stone under it. this was on a med egg
like others have said though just a little foil over the hot spots will take care of those areas. we also do not use any wood at all for smoking any poultry. it picks it up hard and quick. at least to us -
I ordered a cake pan to use as a drip pan. They come in all different sizes and help cover any gaps on the platesetter. It has been a while since I ordered but it was not expensive and I just googled cake pans to find the source. Your turkey looks great by the way.
