getting ready to cook a prime rib. Any suggestions? I'm thinking a slow cook at about 250.

  • I followed these instructions on mine and they came out great:

  • That looks pretty good, but I don't have a fat cap. I think I'll put on Kosher salt and follow his suggestions

You are right on track, 250 dome temp, indirect, for about 3 hours for a 4 lb roast until internal temp hits 130. Pull then let rest. Prime rib is a very easy cook and ultimately depends on the quality of the meat for the final outcome. Throw in some wood chunks also throughout the lump for a nice smokey taste.
