At 12.40 I put on a Canadian Bacon to smoke and a Pastrami.
The Canadian Bacon came off about an hour and half ago, the Pastrami is still around the 149 to 154 mark. Is there is a plateau with Pastrami? :(

Was it a corned beef or did you brine it?

It was a corned beef that I soaked for 4 days, dried it, placed it in the frige of 1 hour, and then began smoking.

Well brisket has a plateau and corned beef isn't cooked so I would guess it has a plateau. Maybe someone with more experience will chime in.

I honestly did not pay much attention, but I cooked two this weekend and it took about 5 hours, at 250.
