Just thought I'd give you all an update here, had lots of great responses as to what wood to smoke with here.[p]Decided to try coconut husks first. Pretty easy to come by. The flavor was not bad, but it did not produce enough smoke. (yes, I soaked them. I may be blonde but I do know bout eggin)[p]Had some response from some locals. They suggested seagrape wood. Next day there was a nice man at the door giving me some. It is not dried though. Gotta wait. They are only about 2" diameter, anyone have a suggestion as to how long to let them dry in my garage?[p]thnks,
Jo

You should be OK in about 3-4 months, Jo. Sounds like an interesting flavor.[p]Jim
