Flatiron fajitas

Been hearing a lot about flatiron steaks, so decided to give it a go. Less than 5 bucks a pound at Kroger:
On the Egg at sub-thermonuclear temps with a little DP Cowlick:
Flipped at a minute, flipped again after another minute, and then shut everything down for another 4 minutes, flip, and one last 4 minutes:
Added a few onions during the rest:
At the rest:
They allege he is mine. He likes my food, so I will claim him
Good eats:

Great looking fajita!
Every once in a while my Kroger has a sale for flatirons at $3.99/lb. I stock up and freeze it for fajitas. The last time I did that the lady at checkout asked if I left any. -
Its basically from the shoulder of the steer--NAMP guide lists it as Beef Shoulder, Top Blade Steak. Researchers state that it is the second most tender cut of meat, after the tenderloin.

Lookin' good. I always look for good pricing on flat iron, still at $5.99 to $6.99/lbs hear. Flat iron is definitely a good change from NY, ribeye, etc.
