Well first off started the BGE at 9ish cooked a breakfest pizza to start the day ! Then about 40mins ago just got my beef side ribs on the grill ...cooking at 250ish with some cherry smoke and apple juice in the drip pan ........Later today I will trow on my pork ribs and they should finish with the beef ribs ....then after the ribs come off cooking some chicken wings !!!
Any tips i'll take.....my plan is beef ribs 5-7hrs (250ish temp)
pork ribs 3-4hrs/ 250ish temp
wings 30-45 mins

I would throw the pork ribs on a little earlier. I do both beef and pork ribs @ 250 for 6-7 hours.

They are spare ribs should still be fine then, should I cut my beef ribs in half to give me more room !??! and use my rib rack ...............

What JB said. My experience is that the beef ribs may finish before the pork. Cut em up and get everyone in the pool.

I like to goose the temp to around 325 for the wings and let them go for around 60 min indirect--I find this crisps up the skin a little more.
