Salmon Leftovers

What do I do with them? The salmon was great but I've got some left. Any ideas?

I just finished a meal of salmon leftovers. Just as good as they were fresh off the grill last night. Fish is the one thing I generally don't prefer for leftovers. However, grilled salmon on the Egg seems to do fine.

I lived in Alaska for quite a while and had leftover salmon often. I would either do sandwiches with it, mixing it with mayo much like tuna fish or fry it up mixed with mashed potatoes and bread crumbs. Good stuff enjoy.

Carwash Mike-- I live in OKC and have a new egg. I'm not going to cook at the OKC event, I'll just soak up some knowledge from the pros. The salmon leftover recipe looks good, I would probably add shallots or onion. Thanks for the info.

Seafood pie.
Mix the flaked salmon into a bechamel sauce and put into a pie dish. Top with creamy mashed potatoes, scatter with breadcrumbs and bake for 10/15 minutes until the top is light brown and crispy.
You can also add some grated parmesan to the topping or to the sauce for a fabulous flavour.
For variety you can mix other fish or shell fish with the salmon, prawns, shrimp, mussels, cod, haddock, the choice is only limited by availability, but this really is a beautiful dish.
Alternatively, flake the cold fish and mix with a seafood cocktail sauce (mayonnaise, tomato ketchup, tabasco, a spoon of brandy(optional)mixed together.) Serve on a bed of salad leaves, or on a good crispbread or your favourite crackers, or maybe with some melba toast.
Fishcakes.
Flake the fish, mix with mashed potatoes, and form into patties. Toss in flour, then dip in beaten egg, then roll in breadcrumbs, and pan fry in hot oil until crisp on the outside, and creamy in the middle. Serve with a spicy plum sauce, or a sweet chilli sauce.

Another option is to make a dip, with cream cheese and dill, maybe some onion.
