too spicy for my wife, but spot on for me. I cooked your "The" chicken recipe yesterday and really liked it. Honestly, I was expecting the veggies to barely notice the chicken, but there is a surprising amount of fat that drips down onto them. Awesome!
Have you tried it without coating the pieces in flour? I thought I might crisp the skin up (no flour) but do everything the same.

Glad you liked it. The skin is quite crispy when it comes out of the Egg but gets soft during the steep. The flour is there to give the sauce something to hold on to. -RP
