I think I finally figured out the low and slow cook. I put on 2 - 8lb. pork picnincs last nite at 11. I lit the lump in 4 places. On my last attempt, I waited for a blazing hot fire before I started my cook. This time I put the picnics on indirect (with a foil pan with water) and kind of tried to "sneak up" on the 225 degrees that I was looking for. My EGG stayed at 225 all night long!! It never budged off of it!! It is rock solid right now at 225!! ( 12 hours and going strong!!)I think I have finally seen the light!!
Sure makes pulled pork easy to do!! No more getting up to check it all nite long!!!!! The smell is driving my neighbors crazy!!![p]AZ Geoff
