So I decided to give Guy's chicken pot pie a try today and I must say it came out real good. I also had 2 full chicken carcasses left over from the weekend and I made a few gallons of chicken stock with for storage and tonight's meal. So away we go...
First I had to get the stock going. The typical Onions, Carrots, Celery, Shallot, Garlic, Salt and Pepper, and two whole sets of chicken bones and scrap meat...
Now to start making the dough for the Pot Pies...
This is what it looks like mixed...
The ingredients for the filling...
Sauteed the veggies then added flour...
Then whisked in 4C of fresh hot Broth and let it thicken...
Then added the chicken and frozen peas and carrots...
While that cooled I got the dough into the tins...
Then filled them....
Then to the Egg with thee, 375 for an hour...
Dinner Time...
Whew that was a lot of work. See you next time!

If that was a third as good as it looked, it was well worth the effort. Beautiful cook!

Dr.,
The chicken pot pies look great. Nnice to see that you made your own pastry. The crust looks nice a flaky. The filling looks delicious. Thanks for the pics! -
 Funny Dr. - Man, that's one of the best cooks I've seen in a while. Just a pot pie but it's awesome. If I try that...I'll be remodeling again and getting flour out of carpet for months! Where is that cigar smoking Fidel tonight anyway? I figured he'd be on here razzing me.
