Chuck's not behaving!

Posted this morning just after I put this 3.5 lb Chuck on @ 11AM. Checked it first 4 hours later, dome still 250, internal temp 140. Checked an hour later, exact same results, so I bumped the dome to 275. Checked again at 5 PM, 6 hours later, internal temp still 140 in several spots with Thermapen. Guess this one just doesn't want to get done. I've done several on the Egg and they usually take about 4.5-5.5 hours to get to 160 internal. I went ahead and foiled and will check again in a couple of hours. Dinner will be later than planned tonite, oh well... :blink:

I checked dome temp with thermapen and its reading 260 whereas the Egg thermometer is at 275 so will recalibrate but doesn't seem 15* would have caused this. Just a long plateau? Any other thoughts.
