I'm doing a squid tempura this evening, need a hint for the tempura dippin' sauce that we get when we go out to eat. It seems to be lighter than teriyaki sauce...

    chuckls,
The recipe I have calls for 1 cup dashi, 1/3 cup mirin and 1/3 cup light soy sauce. Options are grated daikon and grated fresh ginger.[p]If you don't have any dashi you can substitute fish sauce or oyster sauce. (You won't need a cup; one Tablespoon should be sufficient.) And lacking mirin, you can use an equal amount of sweet sherry.[p]All the ingredients are available here in Denver; my favorite is Pacific Mercantile in Sakura Square.[p]Ken
