Slagamated Shrimp

At my son-in laws suggestion, we tried something new on Easter ; Butterfly some large shrimp.Take some cleaned jalapenos and slice them into long strips. Slice some cheese into strips. Insert a slice of cheese and a slice of jalapeno into the shrimp and wrap with 1/2 slice of bacon.Add some rub. Secure with toothpick and egg at 300 direct on a raised grid(use a pan with small holes in it) til bacon is cooked.The bacom keeps the shrimp moist.These were not as hot as ABTs but still had some kick.... "Slagamate"= to kill... these were killer shrimp... a colorful appetizer.

  • Nardi, we were using small slices of swiss cut in strips.Any cheese would probably work...
