My 1st attempt at a Brisket:
Been on since 9 last night, when I awoke the temp had dropped just below 200, opened vents and it came right back up in minutes. Now rocking along about 275. Comments, suggestions to make sure it turns out best I can get it....
I cut the point off (to be cooked another day to make burnt ends) it started as a 14.5 lb whole brisket.
