Here's today's bread! Wifey and I just ate almost an entire loaf slathered with butter. Did I mention that I'm on a diet?

Fred, If it's anything like the bread last Saturday, I'd eat the whole loaf too! I don't think I ate the whole loaf at your store last week.....did I?

Great job Fred!! I love that bread and butter diet too. If you add a glass of wine it's even better, I guess it does something to your metabolism to help the weight come off. :woohoo:

re: recipe ...well I use the recipe and techniques in Peter Reinhart's last book. I went to one of his classes and decided to bake my way through it ..there are only 5 or 6 basic recipes ... then it's just a matter of making different loafs and applications etc. I've been baking a lot of the breads and some of the other things like cinnamon buns .. posted some pics here..anyway ... the BGE is a great bread oven ...I've worked out a method using a inverted aluminum pan as a sort of cloche inside the Egg to help with the steam "injection". Today's loaves had a crispy crust and a soft crumb ..we really liked the way they tasted and the texture ...we have to give away the rest of the loaves tonight or we'll eat all of it.
I'll try to put a picture of the Egg setup here.
Hopefully the pics worked ... anyway ..you can see the water pan making the steam under the stone and then the aluminum pan over the bread. So far this is the best methog I have found using the BGE for these types of bread.Fred A. Bernardo , owner of Tasty Licks BBQ Supply in Shillington, Pa. -
