What to do with all the little bits of leftovers from the Egging and holiday cooking? Make mini sandwiches!
So here's what we had in the fridge:
- Leftover Turkey breast
- Left over pork chop
- last bit of a jar or roasted red peppers
- remains of can of kraut from when we egged some metts
- 2/3 loaf of cocktail rye from egged hanky pankies
Add to that:
- some sliced onion & pickle
- garlic dill havarti cheese
- espresso/lavender rubbed cheese from wine.woot.com (KILLER GOOD!)
- Lemon basil mayo
- dijon mustard
Arrange into sandwiches.
Fire up the panini press.
Dig in!
I have a new favorite way of handling those tiny leftovers now.

Oh Boy, those look wonderful Chris! I like the grill marks, LOL, for some reason I never thought to put them on a sandwich, nice touch!
