Beans, cornbread, and pork chops - yum

Felt like it was time for some comfort food so I made beans, cornbread, and pork chops yesterday.
First I soaked some pintos and black beans for a day, then onto to stove top to start the simmer while I prepared the goods.
Followed thirdeye's recipe except I added two jalapeno's off my almost-done plants, plus some chipotle powder instead of the chili powder. Here are the goods:
Added a couple of ham hocks that I had smoked a month ago and frozen. Onto the egg for about three hours at 325 or so with a couple of big chunks of pecan:
Next I followed the recipe (thanks Village Idiot) in this link:
http://www.eggheadforum.com/index.php?option=com_simpleboard&func=view&id=777251&catid=1
and made this:
I had two pork chops that I bought at a local farmers market from these guys:
http://porkonafork.com/home/
The taste of their chops is so different from the chops I buy in the grocery stores here that you would think you were eating two different cuts of meat. If you ever get the chance to buy fresh, minimally process pork try it.
The chops, with fresh grated pepper and some JH Pecan Rub:
Cooked until they were about 145 internal, then rested for five minutes. Everything ready to go, time to release the hounds:
Dinner was a lot better than good. Thanks for watching.

Well Scott that looks a lot better than good
I have never mixed pinto and black beans. Have you done this before?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers. -
WOW That looks really good

Hi DOW,
Their pork is noticeably better or I wouldn't have mentioned it here. Costs a bit more but it is a real treat. I didn't brine those chops and wouldn't recommend it if you get some. The flavor is outstanding, almost sweet.
I don't know if they do mail-order, but email them through their web site and they will respond.
I see them at most of the farmers markets around here on weekends. - Scott
Edit: I checked their website and they do ship the products. Prices look about the same so only premium would be the shipping costs. -
Thanks teacher! And I remembered the corn too. Ha!

Mickey,
Second time I've done this. We like black beans and eat them often. This is a really nice change of pace for us.
Here is a link to my first post, thanking Thirdeye for a great recipe:

The first batch was actually better than these, but I think it is due to the turkey legs replacing the ham hocks. I really like the smoked turkey legs as described in the older post.
I've made pinto beans this way and they are great too. Try it out and you can't lose either way you go.
Scott
