Saturday's cookout

Last saturday the family had the annual pre-Christmass get together and I got to cook for them... 25 people (children and adults) the menu was roast-beef, pork belly, beer can chicken (just to stand them up), roast potatoes and salad. The best was definetely the roast beef and the pork belly.

For the roast beef I got a 14# whole bone-less ribeye, cut it in half, covered in olive oil, salt and pepper and seared for about 2mins per side at 700F, I then rested for 10 mins while the fire went out, and I added the platesetter and let the temp drop down back to 450F. I setup the drip pans and grid on top and the ribeyes on top of the grid and roasted for half hour. Shut the vents and let the temp drop to 350F and let go for another hour or until 120F internal. After resting for 40 minutes I carved. It was wonderful...

For the pork belly all I did was slit the fat and rub in some fresh thyme, salt and pepper and roasted at 450F for 30mins and then 30 more at 350 or until 185F internal. That too was awesome... all in all it was a very nice meal with great company and cold beer and tequila... the weather was a bit cold though.. around 15C in the morning brrrrrrrrr hehehe :whistle:
