Cooked yet another spatchcocked chicken last night, rubbed with a cut lemon & herbes de provence, then basted near the end with a little more lemon, some garlic, and olive oil. A handful of apple chips gave it a touch of smoke flavor & good color on the skin. I don't know if I'll ever roast another chicken in the oven!
