OK beef experts.... What exactly is this cut of meat? the marbling of fat really caught my eye and I'm goign to coarse grind it for some (hopefully) nice juicy burgers.

It is a chuck roast which has been sliced cross ways against the bone. It will make great burgers. Good luck to ya. Tom

It will be perfect for grinding..... Those come from a section of the chuck, which is basically the front shoulder of a beef. Called chuck ribs, they are sort of like boneless pork country ribs, which are cut from the butt end of a pigs shoulder.
I buy the whole boneless chuck rolls for grinding, they are a good deal too.Happy Trails~thirdeye~Barbecue is not rocket surgery -
I marinate it for few hours and then grill them. I would put a rub or seasoning before grilling. They are tasty. . Cook to medium rare. Nice thing is it is inexpensive.

I bought these short ribs at Costco and cooked them just like I do baby backs, 3-1-1. They were terrific.
