Still trying to figure this one out.
Did nothing fancy or different, 14# bird pulled with breast temp at 168º, let rest for 10 minutes. Thighs and legs were barely done and the beast was dreadfully dry.
Usually turkeys are a slam dunk, but dry breast at 168º? :S Sure don't know why....

what was the rest of your set-up?

Hey Max,
XL with platesetter and drip pan, dome temp at 350º, Royal Oak lump with one pecan log.
Bird was cold washed, pat dried, then thin layer of olive oil, then black pepper rub...nothing more.
I did not tent or baste, maybe that was the mistake...

set up sounds OK ....maybe add some liquid to the drip pan next time. .either apple juice/cider, wine, or beer. .. certainly can't hurt ...
