    Bob V, Don't know yet. I pretty much followed your advice and we are probably going to be cutting into it in about an hour or so. It smells great, I hope it works out!!!
    Do I need to let it sit before I carve it up?

    If it is an hour before eating time, I'd take it off now and let it rest. Keep it in the foil but off the heat. That way it will reabsorb some of the juices and should be better to slice.[p]Good eatin'[p]Bob V
