The chops - marinated in citrus brine since this morning; pulled at 160, I would have liked them better at 140-150, but hubby and son devoured, so must have been ok! Served with lime/garlic/ginger vinerette over mixed greens/green onion/shredded carrot/mandarin orange salad. Accompanied with (nuked) sweet potaot/butter/DP Pineapple Head [thanks Reelgem }
a couple bottles of California Reisling topped it off
The pork rinds - very first ever; got a little too "dark" but have 4 more fresh picnics to practice
Finally, and still waiting at 187 F and 14 hours, the nearly 9 # before trimming fresh pork picnic

I prefer the darker flesh color pork. I believe it has more flavor. I am not sure if it is the breed of hog or poor blood draining during the kill.

It was much leaner, too, than the butt. Cooked 9# in 14.5 hours whereas I would typically cook a butt of similar weight in 18 hours.

Okay, Smackdowners.....I have a couple more things to cook today....Garlic Marinated Shrimp and a Dusted Salmon Fillet. The shrimp will be cooked early as they will chill for a happtizer, and hopefully there will be some daylight when the salmon goes on.
