Catfish ...

Good morning all,[p]I tried some catfish filets on the egg last night with disappointing results. The fish was OK but not great. I brushed the filets with a butter/dill combination and cooked direct at 350 on a fish grid for about 20 minutes. Smoked with a bit of alder. [p]Anyone have a good recipe to make the cat a bit more flavorful ... also, how can I crisp it up a bit?[p]Doc

    FatDog,[p]The oilyness of catfish filets makes them very forgiving for hot and fast grilling like a steak.[p]This is how we like them. 600+° for just 3-4 minutes per side will give you the crispiness you are looking for. We also generally use a Cajun spice blend and some apple chips in the fire and/or mesquite.[p]K~G

    KennyG,[p]Dizzy Pig's Swamp Vennom is perfect for this...I cook the same way hot and fast...on the last turn I put butter on the top....mmmmmmmmmm
