Started with a 8 1/2 pound tip roast (sunday) rubbed with raising the steak, basil and oregano

on at 375 indirect

100_3583.jpg

pulled at 125 internal, rested and into the fridge for a couple days

100_3584.jpg

Opps ain't gonna fit on my toy slicer

100_3587.jpg

had to cut it in half

100_3588.jpg

all sliced up and ready to go

100_3590.jpg

bell peppers, onions and garlic in EVOO

100_3591.jpg

add the meat

100_3592.jpg

and the dripping from the cook along with beef and chicken stock and it's simmering away at the moment

100_3593.jpg

about another hour or so and with the help of a couple rolls I'll be in heaven :woohoo: :woohoo: :woohoo:

There's plenty left for you. Only put in 6 1/2 pounds and saved 2 for cheese steaks
