Mad Max Turkey

Cooked a small 10 pound turkey Saturday and followed the Mad Max method to the letter. It was truly great. Even though I used the Egg feet to raise the roasting pan up the dripping still tried to burn a little. I forgot to put the apple in the roasting pan, but everything else was spot on. I really liked it. Does anybody have a recipe for more of a smoked turkey that really stays moist?
