4 lb brisket flat

This is probably too late....but hope to get a learning experience out of it.

I put said brisket on at 8am this morning...250 dome (therms recently calibrated...stoker controlled).
I hovered +/- 2 degrees around 160 from noon til 4 (158-162). I assumed this was a long plateau and it looked like I was starting to come out of it.
At 4:30, still not more than 163 and I foiled with broth. I checked with a fork and it was pretty tough.
Waiting for 175-180 to see what it's like then.

Any thoughts on what I should've done different?
