This is Kenny my personal butcher and the only place i get my meat. Here is a set of pics of the meat i used in my meatloaf and well worth the money and peace of mind after reading that article posted the other day about ground beef and e-coli. Here are the chuck rolls as he is breaking them down.
The trimmins' are what he uses for his ground beef.
This is a stoplight meatloaf with onions, spices and red yellow and green peppers.

And finally dinner with a big salad and pan fried sweet potatoe discs.

It has worked out well. he does catering on a large barrel smoker that i showed him how to use and do low-n-slow on and it has been a great partnership ever since.

That looks great. The steaks on the green sheet have a line of connective tissue running down the center. Is that the same cut that would be a flatiron, if they were cut the other direction so as to take out that line of connective tissue?

No those cuts are just chuck steaks with the fat plug cut out. The flatiron is the "cap" that runs along the top edge just under the base of the neck meat from my understanding.
The chuck roll is to beef, what a Butt is to pork, the uppermost part of the shoulder just behind the neck. Kenny had already removed the cut that will be flat iron/culotte, before he started to cut the steaks and chuck roasts.
I will be doing some photography for his new web site and i will get a series of shots of the actual cuts for posting. -
Why is he not wearing any gloves and has a watch on?

Good question. I guess because it is his shop, not sure. i will ask him when i see him again.
