Carnivore Robust Ribs

Finally got a chance to try out the Carnivore Robust sauce on a mess of baby backs: Robust Ribs.
I did them direct on a raised grid and they were exceptional. Probably the best ribs I've cooked to date. The Robust brought some nice kick to the party and really helped to pull all of the flavors together. Very nice!

Why direct? seems most do ribs indirect? As a newbie I'm not familiar with the reasoning as to indirct vs direct sometimes.

Most folks (including me) usually do them indirect. It's easier to control the heat and to get a tender rib. I just decided to have a go at doing them direct instead.
You can pull it off if you have a low, even fire, and get the ribs as far away from the heat as you can. I used a Woo2 raised grate.
They had good smoke on them and were very moist and tender. They had about the same amount of bark, but a little more crispness than I usually get doing them indirect.Food & Fire - The carnivorous ramblings of a gluten-free grill geek. -
I always cook mine indirect. Nice review. I have used Carnivore in the past with good results also.

Thanks - great sauce. I like the way you get a little shot of heat up front and then it comes around again and lingers for a while. It's also nice that it's not too sweet so the ribs don't scream that they've been sauced.Food & Fire - The carnivorous ramblings of a gluten-free grill geek.
