Number of Spatchcock Chickens I can get on a Large

When I do spatchcock chicken I like to get the BIG (7 lb+) roasting hens. We're having company and I'm not sure 2 chickens will be enough, but I'm worried I won't be able to fit 3.
I'm working with a Large Egg and I do have an extender grate. But the main grate is already going to be elevated and I'm not sure if I can use it with the main grate alrady elevated. Any advice?

Sounds like a small turkey. I would try 2 on the bottom grid and the third on an extender and after 30 minutes or so if the top one is not cooking as fast as the bottom 2 rotate. Probably depends how high the main grate is. EGGsperiment the positions before lighting.
