Turkey

Am going to cook a turkey on the egg but want to try a recipe I do in an oven. 2 1/2 hours for 15 to 20lb bird. 450 degrees for 1 1/2 hours tented in 16 oz of water. Lower temp to 400, untent and cook for another 1 hour. I want to do this on the egg but not tent the bird and using a meat therm. What do you eggsperts think? Will it work
