Pizza-I finally did it right!

Thanks to Judy Mayberry, Chris Tredwell and Fidel, we had the most delicious pizza last night. Do not miss out on fire-roasted tomatoes, if you have not tried that for the sauce. I have cooked about 20 pizzas and the ones that turned out the best were the frozen, grocery store kind. Thanks so much to the afore-mentioned experts for the tricks.....

By all means try roasting the tomatoes. I could not believe how good the sauce was. Finally getting the crust right was all due to the experts....

Might have to try that with some of the Mellow Mushroom style dough. Looks great. Nothing like a slice of pizza pie with salad.

Well, you have dough recipes (don't know if A. Crazy used it), and one of your pictures showed a delicious pizza on a pizza screen. A picture is worth a thousand words!

I'm proud of you, girl! Great photos to boot. I get so intent during fast cooks that I always forget about taking pictures. You are really cool under pressure.
What set-up did you end up using?
I am going to go light the Egg and roast the dozens of tomatoes from my garden that all got ripe at the same moment. I could never eat them all, and I printed out Chris" post on the roasted sauce when he posted it. I have tarragon, thyme, basil, and mint to pick. Out I go!

I ended up using indirect with tne elevated grid, way up in the dome, like you advised. I used one stone for the indirect and two "stories" up used the pizza stone with the pizza screen and pizza. It was fabulous. Even Papa Bear agreed! Thanks so much for your help!

I used publix dough. I really believe the key was the pizza screen and getting it high up in the dome. Even in the oven BE (before egg), I could not tell the difference in publix and homemade.

500 degrees, high up in the dome. Good luck! If you don't have a pizza screen, get one (I bought 5 when I found out how cheap they are). Post your pizza and let us know how it does....
