When cooking meat that touch pay attention to the bark, sometimes it doesn't form well. You might need to rotate or turn the meat. Looking at Pat's pictures there was no problem on his cook.

Is it a good idea to put water in the drip pan to help with moisture, I read somewhere you could put apple juice. Thanks!

Im doing my first set of spare ribs also today. I have two pretty good size slabs. Had the butcher cut them into St. Louis style and country style.
I have the lump loaded the ribs rubbed and in the fridge and about to soak my apple chips. I think im gonna throw the ribs on around 1 or so. Im gonna go ahead and fire up my egg around 12 so i can get my temp adjusted.
That has been my biggest issue getting and holding the temp where i want it but im getting better.
I'll post some pics later of the finished product
Id also appreciate any tips or suggestions.

Some do some don't. I always put apple juice in the drip pan. For ribs, butt whatever. Just always have done it that way. My two cents.
