One more brisket question
Options
I have a brisket to cook and I was wondering, are these done direct or in a V rack. Is the fat cap up or down during the cook.

Indirect, but it doesn't have to be in a v-rack, though that would work in a drip pan. I would say fat cap up so it bastes the meat as it melts. Good luck!
