What is the preferred internal temp for country ribs being slow cooked?

    I was shooting for 180 but went over by about 15 degrees. The recipe that was used (and cooking instructions) were pulled off of Nature Boys website - www.dizzypigbbq.com

    Remember, this cut of meat is from the shoulder and contains a large amount of connective tissue. Slow cooking melts all that yummy stuff into the meat and adds a ton of flavor.
