Thanks to the "So Simple" Pork Butt Recipe, this newbie eggger looked like a pro today! The only thing I left off the recipe/instruction was the shallow water pan. But this butt turned out perfect. I had a 2.5lb and a 4.5 lb sitting side by side and they both smoked 9 and 9.5 hrs...

I pulled them at exactly 200 degrees internal temp.

Both Butts almost fell apart when I removed them and wrapped up in foil, so I knew they would be great.
